I decided to stay indoors all day to nurse my cold. The weather has been fluctuating and other than really wanting to go to my kickboxing class today, there was really nothing else I had planned. It was a great day to stay home, cook, clean and spend some quality time with my kitten.
After feeding the kitten at 7am, I went back to bed and slept in until about 12pm. It felt great and definitely helped in giving me the energy to meet all of today’s goals. The bf was working so the distractions were minimal. After getting all the chores done, I decided it was time for Butternut Squash soup! I know . . . I can’t get enough BUT this time I added a carrot into the mix and made enough for leftovers. This deliciously orange soup makes me so happy.
It also made me crave dessert. I was thinking of baking a cake when I received a notification that Lindsay at Happy or Hungry posted a new blog and it was about BROWNIES . . . HEALTHY BROWNIES.
How exciting! I ran to the supermarket and picked up the missing ingredients, ran home, and got to work.
Yes, those are chickpeas. The main ingredient for the brownie mix is chickpeas! I love chickpeas and felt no guilt in sneaking a few bites of the “brownie batter” while I worked on dessert.
Directions are very simple, mix in all the ingredients in a bowl and get to work. The only regret I have is that I should have worked on making the chickpeas smooth before mixing them in. That was definitely the most difficult part. Especially when the sticky peanut butter was already mixed in. Oh, and I used crunchy peanut butter instead of plain so my brownies have more texture. Other than that, I stuck to the recipe.
Bake for 28 minutes. Take them out. Let them cool and Enjoy.
